How does a grease trap work?

Grease traps are an essential component of commercial kitchens. It works as an interceptor to separate FOGS from the wastewater flow and store them inside its sludge tank.

Grease is 10 to 15 percent less dense than FOGS, therefore when cooled down, they float on top of the water. Grease traps work based on this simple principle. When wastewater enters the trap, the baffling structure of the device slows them down, allowing them some time to cool down.

When cooled down, FOG separates themselves from the water and food sludge and stays on top of the interceptor, and gets trapped in the baffling system. Solids are heavier and they stay at the bottom. In the meantime, water escapes using an outlet pipe. Few grease traps also consist of a strainer to collect solid debris which reduces amounts of food sludge in the tank.
